Add mustard seed and karl leaf to hot oil. Allow mustard seed to crackle and add shrimp. sauté briefly over high heat. Add shredded coconut and sauté briefly.
Season and add salt, ginger/garlic , turmeric and cayenne.
Add tomatoes and onions. Sauté over high heat.
Add cooking cream, let boil and reduce heat to simmer. shrimp can be removed from pan to avoid over cooking but can also remain in sauce for a firmer texture. let sauce reduce to desired consistency.
